Because each heirloom open pollinated Beet seed is actually a dried fruit containing a cluster of seeds, thinning is always necessary. When the beet seedlings emerge, thin each beet cluster by cutting with a scissors. Don't pull unwanted beet plants because you run the risk of disturbing the ones remaining.

Beets are a wind pollinated crop that flowers after exposure to winter cold, thus saving seeds from beets requires two growing seasons. When saving Beet seeds, isolation is required. Beets can also be pollinated by Sugar Beets and Swiss Chard. Beet seeds will last up to 4 years.

Harvest the leaves of the Bull's Blood Beet early for use in salads and soups. Flattened round roots are tasty also, with attractive pink rings inside, best flavor when harvested somewhat young. Leave's color most striking in cool weather, and as they mature. Some heat resistance.

50-60 days.       An Italian heirloom first introduced in the late 1840s. The Chioggia Beet (Pronounced "key oh juh"), is named after the city Chioggia near Venice. The surrounding region, known as the Veneto is famed for it's vegetable production. This beet is a very attractive variety with it's red and white bull's eye pattern, which turn's to all pink when cooked(although it will retain its markings if baked whole and sliced just before serving), it is most commonly enjoyed raw. Mild flavored roots and smooth delicious tops make this a favorite among cooks. Matures early and also requires less cooking time than other beets, two distinguishing features of this popular beet. Does not bleed and stain! Nice for cooking and pickling.

The Golden Detroit Beet root is dark orange-yellow in color, with a golden interior, turning yellow when cooked. One of the fine features of this beet is that it doesn't bleed like red beets do! The roots are very sweet and tasty, even when mature(although best when young, they will not turn fibrous as many beets do), great right out of the garden in salads, but also are wonderful pickled, boiled, steamed or stir fried. The immature tops are great in salads, and when mature have a delicious mild flavor, perfect steamed or sautéed. *For some reason golden beets can have a lower germination rate so remember to plant a few extra.
