Copenhagen Market (Brassica oleracea) 60-100 days. Introduced in 1909 by Hjalmar Hartmann & Co. of Copenhagen, Denmark. One of the largest early maturing ball-head type cabbages. The Copenhagen Market Cabbage produces heavy yields of 3-4 lb heads, which are resistant to bursting. Very hardy, and adapts well to a variety of climates. This variety's compact growth lends well to small garden spaces. Attractive, blue-green heads are high quality, the standard for commercial cabbages developed since it's introduction to the market. Danish Ballhead (a.k.a. Amager) (Brassica oleracea) 90-110 days. An old-time favorite, it has been the standard storing variety since introduced by W. Atlee Burpee in 1887. The Danish Ballhead Cabbage produces round, blue-green, 7-8" heads, weighing 5-7 pounds, with a mild and tender interior. A short stemmed strain of the Danish variety, "Amager", dating back to the 15th century. Adapted to the Northeast, and does well in mountainous areas. Great all-purpose cabbage. Early Jersey Wakefield (Brassica oleracea) 60-75 days. Introduced in the U.S. by Francis Brill, of New Jersey, in the year 1840. Originally grown by said gentleman and neighbors, the Early Jersey Wakefield Cabbage developed from a natural cross between the variety "Wakefield", from England, and the other cabbage varieties growing in the neighborhood. Officially introduced to the public in the 1850s, by the well known Peter Henderson. This variety is one of the earliest and best cabbages, and known to be very reliable and easy to grow. Heads are conical in shape, solid and tightly folded, 7" in diameter and 10-12" long, weighing 2-4 lbs, set on short stems. Golden Acre (Brassica oleracea) 62-65 days. Produces very flavorful, tight, round heads, 6-7" across, on compact plants, approx 1 ft. tall. The Golden Acre Cabbage is an easy to grow variety and works especially well for the small garden where space is limited. Heads are medium green with a white interior. Late Flat Dutch (Brassica oleracea) 95-110 days. One of the largest cabbages with solid oval heads growing to 7" deep by 12" in diameter, and weighing in at 10-15 lbs. The Late Flat Dutch Cabbage stores very well, and is the standard for late season varieties. Heads have a short core and excellent wrapper leaves. Savoy Perfection (Brassica oleracea) 90-92 days. A large drumhead-type cabbage that has finely-wrinkled, savoyed leaves, mild and sweet in flavor. The Savoy Perfection Cabbage is finer than most cabbages, being sweeter, with a delicate flavor. Savoy Perfection also does not give off the sufur smell when cooking, like other cabbage varieites. Michihili (Brassica rapa) 70-85 days. A heading Chinese cabbage, producing cylindrical heads that are upright, 4" in diameter and 14-24" in height. The Michihili Chinese Cabbage is a very poular variety, the most commonly grown Chinese cabbage in America. Grows best in mild climates. Excellent in stir fry, coleslaw, salads or added to your favorit Asian dish. Pak Choi, White Stem (a.k.a. Bok Choy) (Brassica rapa) 45-50 days. A non-heading leaf type Chinese cabbage that produces large, nearly round, smooth, glossy green leaves with snow white stalks. Pak Choi White Stem Cabbage is crisp and mild tasting, a popular green in Asian cooking. It is a main ingredient in Chow Mein. Very cold hardy. To avoid bolting, plant later in cool areas.
