Pumpkin Bread

Cream together until fluffy:

  • 2/3 cup shortening
  • 2 2/3 cup sugar

    • Stir in:

  • 4 eggs
  • 16 oz mashed pumpkin
  • 2/3 cup water

    • Blend in dry ingredients:

  • 3 1/3 c. flour
  • 1/2 t. salt
  • 1/2 t. baking powder
  • 4 t. cinnamon
  • 1/2 t. nutmeg
  • 1/2 t. ginger

    • Stir in:

  • 2/3 c. coarsely chopped nuts c. raisins or dates
  • optional: dried cranberries or cherries and/or chocolate chips

    • Preheat oven to 350°. Grease 2 - 9x5x3 in. loaf pans or 3- 8½x4½x2½ loaf pans. Pour batter into prepared loaf pans. Bake approx. 1 hr. to 1 hr. 10 min. or until toothpick inserted in center comes out clean.
