Baba's Zucchini Stew

Recipe Summary:

A great meatless meal, but also delicious with chicken or bacon stirred in, or both!

Ingredients:

  • 1 teas. garlic pepper
  • 1 teas. garlic salt
  • 2 garlic cloves, minced
  • 1 teas. Tomato, Basil, Garlic Blend Mrs. Dash Seasoning
  • 1-2 Tabl.minced garlic
  • 1 stick of butter or one can of broth(chicken or vegetable)
  • i red or sweet vidalia onion, diced
  • 1-2 sweet peppers, diced
  • 2 cans of stewed tomatoes, cut up
  • 2 zucchini
  • 2 yellow summer squash
  • 2-4 portobello mushrooms
  • 16 oz. of tri-color rotini pasta
  • 12 oz. of shredded white cheese (Italian blend is really good on this)
  • Cooked chicken, bacon, or both
  • Directions:
    Wash veggies. Leave skin on zucchin and summer squash(but cut off ends). Cut veggies in quarters or sixths from end to end, then slice approx 1/8 to 1/4 in. thick. Using a very large, deep skillet or dutch oven, saute' veggies in the nutter or broth. When they begin to soften, add seasonings, cover and simmer. Meanwhile, cook the pasta. When zucchini is tender, add tomatoes, and heat, then add to pasta. Fold together, then sprinkle with cheese, sprinkle with chees when serving.
