Hot Pepper

For Hot Peppers the Scoville Scale (found at the bottom of this page, with varieties we carry in bold print) is most often used to rate the "heat" of pepper varieties. The substance that makes peppers HOT is an oil called Capsaicin. It is mostly concentrated in the veins of the pepper, although to a lesser degree in the seeds as well. 100% Pure Capsaicin rates at 16,000,000 Units on the Scoville Scale!
How HOT do you like your peppers?

A very helpful tip when handling or eating hot peppers: if your skin burns from hot peppers, coat it with yogurt or sour cream, and it will counteract the burning sensation. I have personally used sour cream on my lips when they were burning from hot sauce, and it worked great! Sweet relief!!! Drinking milk will also help kill the "burn" in your mouth, much more effectively than water, or eating bread products. It is a very good idea to wear rubber gloves when handling hot peppers. And make sure to wash hands thouroughly afterwards with a grease cutting soap like dish soap, which will cut the oils. If not the oils stay on your skin, and if you touch your eyes or nose you will not forget the results! Also, wash cutting boards, knives and utensils in grease cutting soap after using with hot peppers, so as to not get the oils in other foods.
