Hot PepperFor Hot Peppers the Scoville Scale (found at the bottom of this page, with varieties we carry in bold print) is most often used to rate the "heat" of pepper varieties. The substance that makes peppers HOT is an oil called Capsaicin.
It is mostly concentrated in the veins of the pepper, although to a lesser degree in the seeds as well. 100% Pure Capsaicin rates at 16,000,000 Units on the Scoville Scale!

Anaheim (a.k.a. Anaheim Chile, and Long Green Chile) (Capsicum annum) 70-90 days. As the name suggests this open-pollinated chile pepper variety was given its name when brought to the Anaheim, California area by a farmer named Emilio Ortega in the early 1900s. The Anaheim Hot Pepper is a mildly-hot variety, producing chile peppers 6-8½" long by 1½" wide, tapered or conical in shape, two-celled, of medium thickness, and pungent in flavor. The fruits are a dark green, turning to red at maturity. Plants are bushy, upright, 24-30" in height, and bearing continously through the season. These chile peppers are great roasted, fried, stuffed, in stews and sauces, raw, canned, or dried. Popular for chile rellenos or strung into restras. Item No. PpAna |

Ancho 101 (a.k.a. Pablano Chile (when fresh), and Pasilla Chile)(Capsicum annum) 68-85 days. A heart-shaped open-pollinated chile pepper that tapers to a blunt point, often used for stuffing, that finds its origins in Mexico. The Ancho 101 Hot Pepper starts as a very dark, almost black, green, maturing to a deep mahogany red. These chile peppers are mildly-hot and grow to 4-5" long by 2-3" in width, with medium thick walls. Plants grow to 30-36", with a spreading habit. Anchos are mildly hot, and are great fresh (refered to as Pablanos) or dried (refered to as Anchos). Cayenne, Large Red Thick (a.k.a. Large Thick, and Large Long Red) (Capsicum annum) 64-80 days. A fiery hot open-pollinated chile pepper variety, quite aromatic, with thick, wrinkled flesh, that turns from green to fire-red at maturity. The Large Red Thick Cayenne Hot Peppers grow to 5-7" long by 1¼-1½" wide at the shoulders, and are tapered and slightly curved. The strong, upright plants are large and open, allowing for easy harvest. Set is concentrated, and harvest shorter than some. These chile peppers are very pungent even when small. Cayenne, Long Thin (a.k.a. Long Red Slim Cayenne, Slim Cayenne, Long Narrow Cayenne, Long Thin Cayenne, and Long Red Narrow) (Capsicum annum) 70-75 days. A long slender variety of open-pollinated Cayenne cile pepper, a dependable producer and favorite of gardeners for years now. The Long Slim Cayenne Hot Pepper grows on large vigorous 22-30" spreading plants, producing bountiful harvests of 5-6 long by ¾" chile peppers. Two celled fruits are thin, tapered, and wrinkled turning from dark-green to bright red at maturity. This chile pepper variety is very hot, and great for use in chili and homemade salsa. Cherry, Large Red (a.k.a. Large Hot Cherry, Cherry Hot, and Hot Red Cherry) (Capsicum annum) 69-85 days. A late, but very productive open-pollinated chile pepper variety. The Large Red Cherry Hot Pepper is a medium-hot variety, bearing flattened-globe shaped, 1" by 1½" chile peppers, medium-dark green turning to bright red at maturity. Orange Habanero (Capsicum chinense) 90-100 days. An EXTREMELY hot open-pollinated chile pepper variety native to the Yucatan Peninsula of Mexico. The Habanero Hot Pepper is 100 times hotter than the Jalapeño Pepper, and is the hottest open-pollinated hot pepper available! The fruits are lantern shaped, growing to 1" by 1½", with wrinkled light-green flesh turning to a golden-orange at maturity. Hot Hungarian Yellow Wax (a.k.a. Hungarian Yellow Wax, Bulgarian, Hungarian Wax, Hungarian Wax Hot, Hungarian Long Wax, and Hot Banana Hungarian Wax No. 2) (Capsicum annum) 55-85 days. A medium-hot old-world favorite open-pollinated chile pepper. The Hungarian Yellow Wax Hot Pepper has a sunset-ripening habit, changing from yellow to orange to red when mature. Fruits grow to 5-8" long by 1-2" wide, tapering to a point. Walls of these chile peppers are of medium thickness. Jalapeño, Early (Capsicum annum) 60-68 days. With this open-pollinated variety you now can harvest this ever-popular medium-hot chile pepper even earlier! The Early Jalapeño Hot Pepper produces heavy yields of 3-4" long by 1½" wide thick-walled, bullet-shaped chile peppers, turning from green to red at maturity. Jalapeño, Mid (a.k.a. Jalapeño M) (Capsicum annum) 75 days. A mid-season open-pollinated variety of the most popular hot chile pepper around! The Jalapeño Mid Hot Pepper is very prolific, producing lots of 3-3½" long by 1½" wide bullet-shaped, thick-walled medium-hot chile peppers, very pungent in flavor, but more mild than some of the other jalapeños. Serrano (a.k.a. Serrano Chili and Serrano Hidalgo) (Capsicum annum) 75-90 days. The Serrano Chili Hot Pepper's name comes from the word serranía meaning "hill range" after the mountain ridges of Puebla and Hidalgo in Mexico from where it is thought to have orginated. The candle flame shaped, medium-thick walled, medium-hot to very-hot open-pollinated chile peppers grow to 2-3" in length by ½" wide, and are a glossy green, changing to bright red at maturity. Plants are erect, branching, vigorous and prolific, growing to 26-34", and producing up to 50 pods each, bearing continuosly throughout the season. Serranos are used at both the green and red stage. Has a distinctive flavor, sometimes described as clean with a bite, having no after-burn. A favorite chile pepper for hot salsas, guacamole, and sauces, easy to prepare as they do not require peeling. Simply roast the peppers remove the stem, dice, and add to your favorite Mexican dish! California Wonder 300 (a.k.a. California Wonder 300 TMR) (Capsicum annum) 73-76 days. Purple Beauty (Capsicum annum) 70-75 days. The best open-pollinated purple bell pepper on the market. The Purple Beauty Sweet Bell Pepper produces lovely fruits, staring out an emerald green, and turning to a beautiful eggplant purple when ready to eat, finishing out as a deep red when at full maturity.
