Sweet Peppers
Sweet bell peppers come in colors ranging from green to red, orange, yellow and black. Peppers that are green are less ripe and therefore sharper in flavor. To use sweet peppers raw, cut out the stem and loose seeds.
Hot peppers come in hundreds of varieties and degrees of hotness. When cooking with Hot Peppers it is always wise to add peppers a little at a time until you discover how hot they are. To prepare chili peppers, cut off stalks, slit bodies, and remove all seeds. Make sure you wear gloves or wash your hands after touching peppers, and don’t let their oils get near your face or eyes.
