(a.k.a. Black Mexican) (Zea mays) 70-90 days.       One of the few black corn varieties. Introduced in seed catalogs in 1864, Black Aztec Non GMO Corn is great as sweet corn, but also makes delicious corn flour (makes a neat blueish-gray cornbread!). Stalks grow to 6′, bearing 7-8″ ears, that are white in the milk stage (sweet corn), and turn to a deep blue-black when dry. Very hardy, grows well in many conditions.

Planting Instructions for Black Aztec Non-GMO Corn Seeds

Black Aztec Non GMO Corn is a warm to hot season annual, sensitive to cool soil. Direct seed heirloom corn when soil reaches 65-70°F. Plant seeds 1- 2″ deep, 4-6″ apart, in rows 20-30″ apart, in full sun. Corn is wind pollinated, so plant in blocks of at least 4 rows. Germination should occur in 4 – 10 days in soil 65-85°F. When plants reach 4-5″ tall thin to 8-12″ apart.

These are delightful. Good tasting fresh, and there’s a sweetness in the blue flour that grinds out of the dried kernels. I could almost eat my pancakes without syrup.
