(Allium cepa) Crystal White Wax Onion (A.K.A. White Bermuda, Crystal White Pearl)
Days to Maturity: 60-100 Days
This short-day heirloom onion originated in Bermuda and was brought to Texas in the early 1900s. Bermuda, once known as “The Onion Patch,” became famous for exporting its sweet onions to the U.S., and this variety has remained a favorite for its mild, juicy flavor ever since. An All-America Selections (AAS) winner, Crystal White Wax onions mature quickly and perform best in southern gardens. Unlike most onions, they can be direct-seeded in early spring alongside peas, with their pearly white bulbs ripening in early summer.
If you’re looking for small, tender pearl onions, harvest in early summer when the bulbs reach about an inch in diameter—ideal for pickling, adding whole to stews, or roasting to bring out their natural sweetness. If larger, fully mature bulbs are preferred, allow them to keep growing until late summer, when they reach 2-3 inches across. Because these onions don’t store well, they are best enjoyed fresh.
A standout in the kitchen, Crystal White Wax onions have a sweet, juicy flavor that enhances stews, soups, pot pies, and stir-fries. Other favorite uses included: slicing them into salads, lightly sauté them for a milder taste, or even known to be pickled and added to favorite cocktails. The tender green tops are just as useful, offering a mild onion flavor that works beautifully as a garnish or as green onions in salads or recipes.
A great choice and easy to grow, this variety requires minimal effort while delivering consistent yields. With cold, heat, and drought tolerance, it adapts well to different growing conditions, making it an excellent choice for home gardeners looking for a dependable crop.
High in vitamin C, potassium, and antioxidants.
Disease Resistance: Pink Root Rot.
