(Tragopogon porrifolius) 150 – 175 days.     Originally from the Mediterranean, Mammoth Sandwich Island dates to at least the 1880s. A skinnier relative of the parsnip, salsify is a tasty, creamy and versatile winter root vegetable. Roots are 8″ to 9″ long by 1″ to 1 1/2″ thick at the shoulder and tapering with off-white skin and white flesh. Good winter keeper in storage or may be left out over winter and harvested in early spring.
