Onions are one of the oldest vegetables and have been around for over 5,000 years. Treasured for their medicinal value and ease of storing, they quickly spread all over the world. This powerful vegetable can be used to disinfect wounds and increase circulation. Rubbing them on cold feet will warm feet up!
Miraculously nutritious, onions are loaded with phytochemicals, vitamins A, C, calcium, folate, beta carotene, fiber, iron and potassium, and are known to reduce bladder infections, strengthen the heart and prostate, and lower blood pressure. Since onions are rich in antioxidants and amino acids, they also reduce inflammation and risk of cancer, balance blood sugar and cholesterol, improve digestion and even help with allergies! The high level of antioxidants are responsible for their unique aroma and sweet flavor. To avoid crying when cutting onions, try running them under cold water first to diffuse the strong odor.
Onions vary in taste and color, although the yellow onion is the most popular and accounts for a whopping 75% of all onion sales. Different regional areas in the US have their own unique kind of onion, such as the sweet Walla Walla onion, named for its county of origin, Walla Walla County, Washington. A French soldier planted seeds from Corsica when he settled in the area. Tangy onions can be eaten raw, sauteed or fried, and will add punch to any dish, from salsa, to burgers, salads, soups, and casseroles to virtually any meal!
Onions are cold hardy, so plant your St. Clare’s Heirloom onion seeds in the spring, in full sun, and in loose soil. If you live in the north, make sure temperatures won’t fall below 20°F.
