(Valerianella locusta)
Corn Salad (A.K.A. Lamb’s Lettuce, Common Cornsalad.......)
Days to Maturity: 40–60 Days
Corn Salad has been grown in Europe since the 1500s and was first noted by botanist John Gerard in 1597. Thomas Jefferson grew it at Monticello, though it remained uncommon in the U.S. until the 1980s. This cool-season green thrives in full sun to part shade and is ideal for early spring, fall, or protected winter harvests in milder zones. Corn Salad forms compact rosettes of dark green, spoon-shaped leaves on 12" plants. Leaves grow up to 6" but are best harvested at about 3" for peak flavor and tenderness. Corn Salad offers a mild, nutty flavor that’s often compared to a blend of butterhead lettuce and young spinach. It’s excellent in fresh salads or lightly sautéed. Rich in vitamin C, beta-carotene, B6, iron, and potassium, it’s a great addition to the kitchen garden.

(Lepidium sativum)
Garden Cress (A.K.A. Common Garden Cress and Peppergrass)
Days to Maturity: 40–50 Days
Believed to have originated in Persia, garden cress spread through the Middle East, Europe, and Asia before reaching the U.S. from China. Fast-growing and valued for its peppery flavor and medicinal uses, it thrives in cool temperatures between 50–68°F and grows up to 24 inches tall. Tender, light green leaves are best harvested young, while mature plants produce clusters of tiny white or pale pink flowers, followed by 1/4–1/2 inch seed pods. Both flowers and seeds are edible and used fresh or in teas. Offering a sharp, mustardy flavor stronger than watercress, garden cress adds zest to creamy foods, salads, and traditional potato and carrot soups. Leaves store several days when refrigerated, and seeds dry well for culinary use or replanting. Rich in protein, iron, magnesium, and anti-inflammatory compounds, it also supports hair, digestion, and skin health, making it a nourishing and valuable addition to any garden!
