Hungarian Sweet Wax Pepper
Days to Maturity: 55–70 days
Botanical Name: (Capsicum annuum)
Sun Requirements: Full sun. (In very hot climates they may benefit from light afternoon shade.)
Introduced to American gardens in the early 20th century, Hungarian Sweet Wax Pepper has long been cherished for its dependable yields, mild heat-free flavor, and versatility in the kitchen. Unlike its spicier cousin, this open-pollinated variety offers the same attractive fruit shape and color transition but with a distinctly sweet taste, making it ideal for those who enjoy the classic wax pepper look without the heat.
The fruits are slender and tapered, averaging 5 to 6 inches long and about 1½ inches wide, with smooth, glossy skin. They begin a pale yellow, deepen to orange, and finally mature to a rich red. Plants grow 18 to 24 inches tall with a compact, bushy habit, producing a generous crop of peppers over an extended season.
Hungarian Sweet Wax Peppers can be harvested at any stage—yellow fruits are crisp and lightly sweet, while red fruits develop a fuller, richer sweetness. Their size and shape make them especially suited for stuffing, pickling, and frying, but they also shine when grilled, sautéed, or eaten fresh in salads. Many gardeners prize them for traditional European dishes and homemade relishes, where their mild flavor pairs beautifully with tomatoes, onions, and herbs.
This variety is a good keeper, with fruits that hold well after picking and freeze easily for later use. They are also excellent candidates for canning or drying, offering multiple ways to preserve the harvest.
Nutrient-rich and wholesome, Hungarian Sweet Wax Peppers provide a good source of vitamins A and C, along with antioxidants and dietary fiber. Their crisp texture and sweet taste make them as enjoyable raw as they are cooked, earning them a long-standing reputation as a versatile garden favorite.
Planting Instructions for Hungarian Sweet Wax Pepper Seeds
Hungarian Sweet Wax Peppers are heat loving plants that are easy to grow, and do well in a variety of climates. Start Heirloom / Open Pollinated Pepper seeds indoors 8-10 weeks before the last frost. Soaking Pepper seeds for 2-8 hrs before planting helps speed germination. Plant ¼” deep in chosen containers. Germination will occur in 8-25 days at 75-90°F. Keep soil evenly moist (not soaked) for best germination. Harden off Pepper plants, then transplant to garden about 2-4 weeks after the last frost date. Plant in full sun, spacing about 12-18″ apart, in rows 24-30″ apart.
Harvest can occur when Hungarian Sweet Wax Peppers are firm and full sized, but still green, or when mature and full color for the variety (mature peppers can deteriorate quickly so keep a careful eye at harvest time). The less green the Heirloom / Open Pollinated Pepper the sweeter the flavor. It is best to use a knife or pruning clippers when harvesting to avoid damage to plant.
