Broccoli Casserole

Ingredients:

  • 2 Heads Fresh Broccoli or 2 Packages Frozen Broccoli Flourettes
  • 1 Can Cream of Chicken or Mushroom Soup
  • 1 Pound of Velveeta Cheese
  • 2 Eggs
  • 1/2 Cup Mayonnaise

Directions:
Cook Broccoli till tender. Drain well and place in large bowl. Add 1 can of Cream of Chicken soup, 2 Eggs, beaten, and the 1/2 cup of Mayonnaise. Blend together well. Add the one pound of Velveeta cheese that has been cubed. Mix well and pour into buttered casserole dish.

Bake at 350°F until cheese has completely melted and is browned some on top. Remove and serve.

NOTE: Sprinkle parmesan Cheese on top before baking, or use crushed Ritz crackers and melted butter for topping.
