Fresh Salsa

  • 2 cups seeded and finely chopped tomatoes
  • 14 cup finely chopped scallions, white and tender green parts
  • ¼ cup finely chopped fresh chile, such as jalapeno (seeded if
  • desired)
  • 14 cup finely chopped green or red bell pepper
  • 2 tablespoons finely chopped fresh cilantro
  • 1-2 tablespoons fresh lime juice Salt and freshly ground black pepper
  • Sugar (optional)

Combine and mix together the tomatoes, scallions, chile, bell pepper, cilantro, 1 tablespoon of the lime juice, and the salt and pepper. Let sit for 15 to 30 minutes. If desired, taste and adjust the seasonings, adding sugar to taste, and more lime juice, and salt and pepper. Makes two cups.
